The entire process of vinification is carried out in our cellars at Nuits-Saint-Georges. The vats are made of wood or stainless steel. The sorting table is always available for the more delicate vines. Temperatures are subject to stringent controls and are monitored with the aim to best suit our terroirs and vats.
In general, the grapes, which are completely destemmed, stay in their vats a long time so that they can be infused with as much character as possible from their Pinot Noir cépages.
The white Chardonnay wines are completely fermented in Burgundian casks.
